# Granola

Makes 6-8 servings

Ingredients

**100g coconut oil**, or rapeseed oil
**50g soft brown sugar**
**250g porridge oats**
**100g roughly chopped nuts**, such as almonds or walnuts
**100g seeds**, such as sesame, pumpkin and sunflower
**a pinch of salt**
**150g dried fruit** (raisins, apricots or cherries)
(100g dark chocolate, finely chopped - only with cherries)

Method

1. Heat the oven to 150C/300F/gas mark 2 and line a large baking sheet with parchment.
2. Put the coconut oil and sugar in a pan and heat gently, stirring, until the oil has liquefied. Don't worry if the sugar doesn't dissolve completely.
3. Put the oats, nuts, seeds and salt in a large bowl. Pour on the oil and sugar mixture, plus 75ml water, and mix very thoroughly.
4. Spread the mixture out on the baking sheet. Bake for an hour, giving the oats a stir halfway through but trying not to break up any nice chunky clusters that form.
5. Take the granola out of the oven and leave to cool. Once cool, stir in the dried apricots or cherries and chocolate. Store in an airtight container. Serve with a little milk or, as I prefer, a couple of good spoonfuls of thick, plain yoghurt.

#### Note...

*Choose whichever blend of nuts and seeds you like and, once cool, add your favourite dried fruits. Personally, I like to allow one fruit and one nut to dominate, rather than have a total free-for-all. You might think along such lines as dried cherry and walnut, or prune and hazelnut, or possibly dried fig.*
