Makes approx 40 little cakes

Ingredients

1 x 397g tin condensed milk
226g desiccated coconut
1 tsp vanilla extract

Method

  1. Combine the condensed milk with the coconut and vanilla.
  2. With a teaspoon put small rough heaps onto a greased baking tray. The mixture should be stiff enough to hold its shape.
  3. Bake in a cool oven (90 °C or gas mark S or 1⁄2) until slightly browned and firm.
