Ingredients

100g sultanas
75ml bourbon, whiskey or dark rum
175g plain flour
2 teaspoons baking powder
½ teaspoon bicarbonate of soda
½ teaspoon salt
125g butter
150g sugar
2 large eggs
(or chia eggs)
4 small, ripe bananas
(about 300g without skin)
60g chopped walnuts
1 teaspoon vanilla extract

Method

  1. Put sultanas & rum/whiskey in a pot and bring to the boil, remove from heat and leave to soak.
  2. Preheat oven to 170C/gas mark 3.
  3. Cream butter & sugar.
  4. Add eggs, one at a time, then the mashed bananas.
  5. Stir in walnuts, sultanas & vanilla extract.
  6. Add the flour and other dry ingredients, a third at a time.
  7. Bake in the middle of the oven for 1-1½ hours.

Note: I haven't done a tremendous amount of fiddling with this, but I did once make it, for friends who are more chocolate-crazed than I am, by replacing 25g / 3 tablespoons of the flour with good cocoa powder (not drinking chocolate) and adding 100g / 4oz of dark chocolate, cut up into smallish chunks. And you could just as easily use the chocolate chips sold in the baking aisle of supermarkets.
